Low-fat salads

It’s so easy to stay on the iceberg lettuce, tomato, cucumber, mushroom and avocado treadmill. I know I could look in recipe books but the best recipes are those tried and tested and cooked often by home cooks. That’s what i reckon, anyway!

one of my favourites is tuna rice salaf=d…. boil some rice and stick it in the fridge when it’s done to cool it down, add some tuna, low fat mayo, diced carrots, capsicum, slices and diced boiled egg, corn and fresh peas. Best summer salad, low fat, easy to make, and really fills you up!

Changs’ fried noodle salad! (the exact recipe is on the packet of Chang’s fried noodles, which you can buy from Safeway). Basically, it’s got wombok (or lettuce will do), onion, pine nuts and dry fried noodles, with dressing made of vinegar, oil, honey and soy. It’s always a crowd-pleaser!
